The shop cannot cut a hole you have not specified. A farmhouse sink on backorder will push install past the useful window. Keep the existing sink if the new one will not arrive in September.

Do not attach a full gut to a Thanksgiving deadline

Countertops sit on finished cabinets. If the boxes are still being chosen, November 26 is the wrong finish line for a whole kitchen. Replace the tops. Move doors, backsplash, and flooring to January.
